If you're not from Dublin then maybe you're not really sure what coddle is - in fact you might not have even heard of it.
But this classic dish warms the hearts and stomachs of many a Dub. So what exactly is coddle? And is it better than stew?
There are actually two types of coddle - brown and white. White coddle is made with water while brown coddle is made with oxtail stock cubes. The ingredients include potatoes, onions with either ham, sausages or bacon. Some people add carrots (although traditional coddle fans would be against this.)

Coddle is considered a 'city man's stew' and is thought to have originated in Ringsend.
Irish stew, on the other hand, is a bit chunkier, made with stewing beef or lamb, vegetables such as carrots, parsnips and onions, potatoes, and beef or lamb stock. Some add Guinness to the stock for extra flavour.
